Chicken Pot Pie Soup

Oh my goodness another good find on pinterest. Chicken Pot Pie Soup. We made this for dinner last night and it was very good. I'll be honest i was a little skeptical about it tasting much like a real Chicken Pot Pie becuase its a soup and i really like that nice flvory sauce in the pot pie but it did. :)

Chicken Pot Pie Soup

1/4 cup Flour
2 Cups Water
4 Cups Milk
1 Large Celery Stalk Chopped
1/2 medium onion chopped
2 Chicken Bullions
fresh ground pepper
pinch of thyme
10oz Frozen Veggies
2 Potatoes peeled and cubbed small
cooked chicken breast, diced small

Create a slurry by combining 1/2 cup of the cold water with flour in a medium bowl and whisk until well blended. Set aside.

Pour remaining water and milk into a large pot and slowly bring to a boil. Add celery, onion, mushrooms, chicken bullion, thyme, fresh pepper, frozen vegetables and return to a boil. Partially cover and simmer on low until vegetables are soft, about 20 minutes. Remove lid, add potatoes and cook until soft, about 5 minutes. Add chicken, and slowly whisk in slurry, stirring well as you add. Cook another 2-3 minutes, until soup thickens, adjust salt and pepper to taste and serve

Tomato & Mozarella Pasta

Oh my i made this for dinner last week. It was good, needs more sauce in my opinion so i will either use less pasta or add a can or two more of tomatoes. I did take a picture of it with my phone....... i'm not sure what happened though its not in instagram anymore. So sorry two posts without pictures!

Tomato and Mozzarella Pasta al Forno
Ingredients:
2 tbsp. extra virgin olive oil
2 garlic cloves, crushed
2-14 oz. cans diced Italian plum tomatoes
1 tsp. dried oregano
S&P
1 lb. pasta (tubes)
8 oz. mozzarella cheese, cubed
2/3 c. parmesan

Directions:
Heat oil in skillet. Add garlic and cook over medium high heat, 1 min. Add tomatoes and oregano and simmer rapidly, stirring occasionally until thickened, 15 min. Add S&P. Meanwhile, cook pasta. Toss pasta with sauce. Place half of pasta in an oiled 9×13” dish. Cover with half parmesan and half mozzarella. Top with remaining pasta, then parmesan and mozzarella. Bake at 400° for 15 minutes.

This is a dish we will be making again. It was quick and easy and is something you can customize to your liking.

Calendar Blocks

Yeah!!!! I have finally made & finished my calendar blocks!!! I have wanted some ever since a few years ago when my mom had bought a set at real deals. I had seen the unfinished countdown block sets at the wood connection for a while but wasn't ever sure how to go about changing out the months because I didn't want to spend a lot of money making a different wood base for each month, not to mention the additional space I would need to store them to only pull out once a month. Then I found this pin on interest & the DUH!!!! Why didn't I already think of this moment happened. I did do mine a little different from the pinterest pin in that I laminated my months, mod podge & I don't exactly get along all that great & I'll be honest I was scared that somewhere down the road the tape would rip my paper because the mod podge had been worn off. So I used my Xyron to laminate them. :) I did use the same font because I thought it was super cute & have been looking for a font with curly "Y"'s for sometime.

This first set I made for my friend who is moving to California. She will still be working for our work, just remotely. She has done so much for me & I am going to miss her not being in the office so much! I thought this would be fun for her to have on her work desk @ home. :)

This second set I made for myself. I LOVE this paper!!! It's Mr. Campy by Cosmo Cricket. They no longer carry it & I am so sad. I have very few pieces of this paper left & was able to make the calendar blocks with scraps! I haven't decided if I am going to take mine to work or keep it on our computer desk at home. Either way it is sure to bring a smile to my face everytime I see it.

printable conversion chart for the kitchen & homemade Strawberry Oreo's

I repinned this conversion chart from a neighbor on pinterest and finally printed it out and put it up in my spice cabinet door. Sometimes its just nice to not have to think about my recipe calls for 4 cups how many ounces do i need to make sure i buy so i can make this or that. :)

Mine aren't printed in color, but you can print this out in the red as it shows on the post from pinterest.

I also made these Strawberry Oreo's for my coworkers. We have treat's on Friday each week its one persons turn to bring in a treat and today is my day. I thought these were good and cute because its close to valentines. Now i will admit i didn't make mine in to hearts i just did round cookies, but i think they still look cute and let's be honest when it comes to food does it really matter what it looks like? Personally I'm all about the taste. :)

Slow Cooker Potatoe Soup

Yum so last night we made this recipe for Slow Cooker Potatoe Soup for dinner.

It was yummy!! The only thing we didnt follow on the directsion was adding a whole onion that just seemed like way too much onion so we only used half an onion. We are also considering adding celery and some salt to the recipe while its cooking the next time we make it. I'll let you know how that turns out. :)

Clothespin Picture Holder

WOW ok this was such a fun and easy project and i am so glad that i did it. It took a little while for me to finish them up because i didn't have the right embellishments for them but i was able to fix that tonight when i made it to the scrapbooking store. Here is the link to the post on Pinterest and here is how mine turned out. :)

I'm very excited to put these on my desk at work because in addition to being super cute they don't take up a lot of room and you don't have to worry about taking a back off a picture frame.

CrockPot Chicken Quesdiallas and Cilantro Lime Rice

Oh my goodness. I think last night was one of the best dinners we have had in a long time. I'll admit we haven't done much cooking sense baby arrived the end of September its mostly been quick things like frozen pizza, grilled sandwiches, baked potatoes and other really easy thoughtless dinners. Last night that changed with these 2 recipes i found on pinterest, not only are they super yummy but as an added bonus they are both super easy!!! Crock Pot Chicken Quesadilla's and Cilantro Lime Rice.

On the Chicken Quesadilla recipe i did 2 cans of Ro*Tel instead of the individual cans of tomatoes and green chilies. We put Cheese, the crock pot quesadilla chicken and the cilantro lime rice in a tortilla and then crisped the tortilla up in a pan on the stove, you've also got to melt the cheese so it wasn't just about making the tortilla warm and crunchy. :) We ate it with Sour Cream on the side, some Guacamole would have been good too but we didn't have any. My husband said we should add olives and a few other things that are escaping my mind right now the next time we make them, Yep thats right we will be making these two again for sure. This is also the first time in a VERY VERY long time that i am looking forwards to eating leftovers for lunch. :)

If you try these i would love to hear your take on them and if you added any thing extra to your quesadilla's.

Tomato Basil Parmesan Soup

Tonight I tried a recipe from Pinterest for dinner. Tomato Basil Parmesan Soup. It was really yummy, it was a little more chunky than i prefer my tomato soup but that's a simple fix for next time i make this.

I plan on adding some cheese raviolis to the left overs to make another meal. Others had commented that they used it as a pasta sauce as well.

Sorry i didn't take a picture of the soup. I should have. I'll have to remember that for next time.

Scarf Organization

Yeah my first blog post about something i have done off Pinterest. :) I'll be honest this was SO EASY!!!! and one of those things where i wanted to smack my forehead and say "DUH!!!! WHY DIDN'T I THINK OF THAT???!!!!" All you need is a hanger from your closet some plastic shower rings (bought a pack of 12 from Target for just over a $1.00)

Here is a link to the original post that i pinned on Pinterest

And here is how mine turned out. please disregard our super messy coat closet :)

All you do is snap the plastic rings closed on your hanger and run your scarfs through them and there you have it!!! instant super easy organization!!!! in under a minuet non the less.
